Super Natural
Super Natural process is an experimental variation of the natural (dry) process that adds controlled cold anaerobic fermentation to intensify fruit flavors while preserving clarity and balance.
How it works
- Harvest – Ripe coffee cherries are carefully handpicked.
- Sorting – Cherries are meticulously sorted at the mill; only the finest fruit proceeds.
- Anaerobic Fermentation – Whole cherries undergo cold anaerobic fermentation in sealed, oxygen-free tanks for 7–10 days at 15–18°C. This controlled stage manages sugar development, temperature, and pressure.
- Drying – Cherries are transferred to raised drying beds and slowly dried with regular turning to ensure even moisture reduction and prevent defects.
- Hulling – Once optimal moisture levels are reached, the dried outer layers are removed, followed by grading and final quality control.
